
▢8 large eggs
▢2 cups shredded russet potatoes (squeezed dry in towel)
▢½ lb compliant sausage
▢6 slices bacon, cooked & chopped
▢½ onion, diced
▢8 oz spinach
▢1 tsp salt
▢½ tsp pepper
▢½ tsp garlic powder
▢2 tbsp olive oil
Preheat oven to 375°F.
Heat 1 tbsp oil.
Brown sausage + onion.
Set aside.
Toss shredded potatoes with remaining oil + pinch salt.
Press potatoes into greased 9x13 baking dish.
Bake 15 minutes (this helps crisp the bottom).
Whisk eggs, spinach, + seasonings.
Sprinkle sausage + bacon over potatoes.
Pour egg mixture evenly over top.
Bake 30–35 minutes until center is set.
Rest 10 minutes before slicing.
