
▢½ large red onion chopped into 1" pieces
▢1 large red bell pepper chopped into 1" pieces
▢1 large zucchini squash chopped into bite sized pieces
▢1 large summer squash chopped into bite sized pieces
▢2 cups brussels sprouts stems removed and halved
For vegetable marinade:
▢3 tbsp olive oil
▢1 tbsp apple cider vinegar
▢1 tbsp coconut aminos
▢1 tbsp favorite seasoning blend
▢salt and black pepper to taste
Preheat your grill (or other pellet smoker) to 375 degrees F for 15 minutes. (You can also use your oven set to 375 if you do not have a smoker or grill)
Add all marinade ingredients to a small bowl and combine well.
Place the vegetables that have been chopped into bite sized pieces in a large bowl and drizzle with the marinade. Toss and mix the vegetables well to make sure they are well coated.
Place vegetables in a smoker or grill basket and place the basket directly on the grill grates.
(IF you are using the oven, spread these flat on a sheet pan)
Allow the vegetables to cook for 30-40 minutes (stirring occasionally) depending on your desired level of doneness and how caramelized you’d like them.
Remove from the grill/oven and enjoy!.
