
▢2 large oranges, peeled and sliced
▢4 cups chopped romaine lettuce
▢2 cups cooked and chopped chicken
▢1/4 cup chopped garlic chives
▢1/2 cup slivered almonds
▢1/2 cup coconut chips
▢1 tbsp toasted sesame seeds
Dressing
▢2 tbsp coconut aminos
▢2 tbsp apple cider vinegar
▢2 tbsp juice squeezed from an orange
▢1 tbsp extra virgin olive oil
▢2 tsp toasted sesame oil
▢1/2 tsp minced fresh ginger
▢1/2 tsp sea salt
▢1/4 tsp ground black pepper
▢1 clove garlic, finely minced
Drain mandarin oranges but reserve 2 tbsp of the juice for the dressing.
In a large mixing bowl, add orange, romaine lettuce, chicken, garlic chives, and slivered almonds.
In a separate bowl, whisk together all the ingredients for the dressing.
Pour the dressing over the salad mixture and toss together to coat.
Top with coconut chips and sesame seeds before serving.
Serve immediately.
